During those umpteen round table food meetings, it used to be fun when I was one of the participants telling my mom “no greens pls”… “Shair ghaas nahi khata” (lions don’t eat grass, implying myself as the king of the jungle). However, now the tables have turned and *drumroll* I am a mom, I pretty much take no to nothing….you know why because “mom” (yours truly) knows the best and this desi mom, ex-hater of most veggies now adores greens. Special respect to my mom, the queen of my life, who pampered me by giving in to my whims and desires and tastes and tantrums, much more than an average mom.

So now living up to the standards of my big fat brown fam, I have become fully proficient in the art of cooking but better still unlike the mom chefs before me, I have evolved to offer the same (if not better) services much faster and with minimal mess/stress. So I still cook extravagantly but only twice/thrice a week as compared to an all day episode of cooking and cleaning. Also I watched and learned the good part of the gora way of cooking which is as basic as possible to keep the actual flavors of the meats and vegetables yet using the very health beneficial spices of the east like turmeric, cumin, coriander and red chilli. So now my fusion way is a hit among all family and friends not only because they are flavorful but also because they are healthier version of the old time cooking.
Just a couple of examples are my chicken tikka steak, baked seekh kebabs, baked fish, Baked lamb roast, baked chicken, vegetable masala stir fry, spicy sauteed chickpeas. Stay tuned for the recipes.
