Up until a couple of years ago, it was a struggle to feed fruit to my family. Now my teens, as they are getting more and more conscious about health and general physical outlook, apples, berries and bananas are becoming a staple with us. Sometimes, I have these items more than what they can consume in fresh state. Being brown, we have this habit, since childhood, of recycling food into new items for added interest. This is what I do with apples:

Ingredients
- 3 Cups Chopped Apples
- 3 Cups Flour
- 3 Large Eggs
- 2 Cups Sugar
- 1 Teaspoon Ground Cinnamon
- 1 Teaspoon Baking Soda
- ½ Teaspoon Salt
- 1 Cup Vegetable Oil
- 2 Teaspoons Vanilla Essence
- 1 Cup Chopped Walnuts
- ½ Cup Apple Juice
Preparation
- Heat the oven at 350 degrees C.
- Sift together flour, baking soda, cinnamon and salt.
- Whisk the eggs until frothy, add sugar, oil and juice to it.
- Add Vanilla essence.
- Roll in the flour mixture.
- Mix until everything is blended well.
- Now fold in the chopped apples and walnuts with a wooden spoon.
- Pour the cake mix in the pre-greased pans.
- Place in the heated oven for 45 minutes at 350 degrees C.
- Enjoy the crispy crunchy apple cake with tea/ coffee.
Tips
If you want extra crispy, leave it in the turned off oven for an additional half an hour.
